1 1/2 cups c0arse gluten free bread crumbs
1/2 cup (4 fluid 0unces) red table wine (0r an equal am0unt 0f beef st0ck + 1 teasp00n red wine vinegar)*
1 p0und gr0und p0rk
1 p0und gr0und beef
1 egg (any size, really), beaten
1 tablesp00n dried 0regan0, crushed t0 release 0ils
2 teasp00ns dried basil
1/2 teasp00n garlic p0wder
1/2 teasp00n 0ni0n p0wder
1/4 teasp00n k0sher salt
1/8 teasp00n freshly gr0und black pepper
2 0unces Parmigian0-Reggian0 cheese, finely grated (0r 1 0unce nutriti0nal yeast flakes f0r a dairy-free versi0n)
T0mat0 Sauce
1 28-0unce can t0mat0 puree (0r 1 28-0unce can wh0le peeled t0mat0es, pureed with their juices until sm00th)
3 0unces (1/2 6-0unce can) t0mat0 paste
1 tablesp00n dried 0regan0, crushed t0 release 0ils
2 teasp00ns dried basil
1/2 teasp00n garlic p0wder
1/4 teasp00n k0sher salt
1/8 teasp00n freshly gr0und black pepper
1/2 teasp00n sm0ked paprika (0pti0nal)
1/2 teasp00n chili p0wder (0pti0nal)
*A n0te ab0ut wine: Be sure t0 use a wine that y0u w0uld like t0 drink with red meat, and make sure but that it d0esn’t have an 0verly fruity taste. C00king with wine, particularly in a sl0w c00ker, tends t0 intensify its flav0r and y0u d0n’t want it t0 0verp0wer the dish.
Directi0ns
First, begin the meatballs. In a small b0wl, place the breadcrumbs and red wine (0r st0ck mixture), and mix t0 c0mbine. All0w the breadcrumbs t0 sit in the wine (0r st0ck mixture) while y0u prepare the t0mat0 sauce.
Prepare the sauce. In the liner 0f a 6-quart sl0w c00ker, place all 0f the t0mat0 sauce ingredients and whisk t0 c0mbine well. Set the liner aside and return y0ur attenti0n t0 the meatballs.
F0rm the meatballs. In a large b0wl, place the gr0und p0rk and gr0und beef, and break up the meat gently with y0ur fingers. Add the remaining meatball ingredients in the 0rder listed, mixing gently t0 c0mbine with y0ur fingers. D0 n0t 0verw0rk the meat 0r the meatballs will be t0ugh. Add the breadcrumb mixture, and again mix until just c0mbined with y0ur fingers. Divide the meatball mixture int0 12 t0 14 pieces and r0ll each gently int0 a ball.
